Spring holiday selections

Is your version of Easter more tropical? Here's the cake forThree tender layers of carrot cake incorporating fresh, grated ginger and nutmeg, Saigon cinnamon, coconut, pineapple chunks, applesauce and dried apricots. The layers are brushed with apricot jam while still warm and covered with  silky vanilla bean cream cheese frosting. I have three carrot cakes in my shop, but this is my only 3-layer (the others are 2)! Decorated with dried apricots and a sprinkle of coconut. 3-layer, 8-inch cake.

An Easter tradition all over the South! Never had one? It's like the best banana bread you'll ever have. Lightly cinnamon spiced cake layers are laced with 2 whole cans of crushed pineapple, 4 ripe bananas and a cup and a half of toasted and chopped Texas pecans. Tastes a lot like a St. Patrick's Day Shamrock Shake! Three layers of super-moist, dark chocolate cake frosted with smooth, green mint-flavored American buttercream. First, I grind a half cup of fresh mint leaves into sugar and add it to the cake layers, then I fill the layers with fresh lime curd with a few splashes of dark rum, and frost it all with Mojito buttercream including all three flavors.
