I start by deeply toasting pecans and chopping them small, then combining with butter and sugar etc. and shaping into 2 inch balls and baking. They get one dip in powdered sugar while warm and another after cooling. Yum!

These cookies use half rolled oats and half oat flour to give them the soft, chewy texture and shiny icing you love, without tons of preservatives. I add cinnamon, freshly grated nutmeg and even a bit of molasses, then ice them with a glaze that hardens enough to be able to stack but still soft to the teeth.
